The TBS Special Chicken Biryani is the signature: basmati layered with spiced meat, sealed and slow-cooked until the rice absorbs all the flavour, then plated as a single composed dish. The menu branches into supporting curries, starters traditional Indian sweets Biryani is the centre. The chicken Biryani is cooked to the point where the rice grain stays separate and fragrant, the meat tender enough to break without resistance, this is the standard the kitchen holds it's what separates a proper Biryani kitchen from one that treats the dish as an afterthought.
